Peanut Butter No-Bake Energy Balls

These no-bake peanut butter energy balls are the perfect portable snack!

They're packed full of goodness, with ingredients like peanut butter and flaxseed, and taste amazing! Some energy ball recipes crumble in your hand, but these hold together really well which makes them easy to take with you on the go.


The best part about this recipe is that you don't need a food processor or any form of equipment. All you need are the ingredients (which you probably already have in your pantry), a wooden spoon, and a mixing bowl. You also don't need protein powder as the ingredients offer enough protein for an energy boost themselves.



Advice on substitutions


Most of the ingredients in this recipe can be substituted to meet your preferences.

  • The only ingredient you can't substitute in this recipe is oats. I tried making the balls with different types of oats but the texture just isn't the same. If you want the balls to hold together well it is best to use old-fashioned rolled oats.

  • Peanut butter can be substituted for any nut butter of your choosing. I recommend using natural but butter as it's less dry and the natural oils act as a useful binding ingredient.

  • Honey can be swapped for maple syrup, agave, golden syrup or any sweet syrup.

  • I recommend keeping the shredded coconut in the recipe, even if you aren't a massive fan of the flavour. It's mostly included for the texture and health benefits. But if you prefer you can simply add more oats instead.

  • Feel free to use your favourite small superfood seeds. I normally choose half chia seed and half flaxseed.

  • You can also swap out choc chips for dried fruit, like raisins or cranberries.

Notes on the recipe


These are some tips I learnt from making this recipe so often

  • It may be tempting to skip the fridge portion of the recipe, but I recommend waiting just that little bit longer as the fridge time helps the dough form and makes it more manageable.

  • When you're forming the dough into balls I recommend picking up a tablespoon-sized portion and squishing it in one hand to combine. If you try to make a circular motion with both hands the dough will fall apart.

Other than these tips the recipe is very easy and only requires 8 ingredients, a large mixing bowl, and 15 minutes of prep, so let's get started!

 

Peanut Butter No-Bake Energy Balls


Makes 14 balls


What you'll need:

80g old-fashioned rolled oats

120g peanut butter

85g honey

25g finely shredded coconut

40g small choc chips

3 tbsp of your favourite seeds (chia seeds, flaxseed, sunflower seeds etc.)

1 tsp vanilla extract

A pinch of salt


Method:

  1. Place the honey and peanut butter in a small bowl and microwave for 30 seconds. This will make it easier to mix.

  2. Then place all ingredients in a large mixing bowl and stir well to combine.

  3. Place the bowl in the fridge for 30 minutes.

  4. Bring the dough out of the fridge and shape it into bite-sized balls. It should make roughly 14.

Take these snacks with you on the go for a burst of energy or enjoy them as a quick breakfast!
